There were some great chocolatey moments at this year’s Dallas Chocolate Conference & Festival. Here’s a rundown of our Top 10 in no particular order:
4/10:
Valrhona sent down their pastry chef, Derek Poirier, to do a demo with Zach Townsend at the Chocolate Conference on Saturday. That was pretty cool, but watching him teach a bunch of eager learners who had probably never been in a commercial kitchen before how to make eclairs was even better.
