There were some great chocolatey moments at this year’s Dallas Chocolate Conference & Festival. Here’s a rundown of our Top 10 in no particular order:
This year on the day after the Dallas Chocolate Conference & Festival we held our first hands-on classes. The Bean-to-Bar Chocolate Making class was advertised as being led by Alice Nystrom (Dandelion Chocolate) and Scott Moore, Jr. (Tejas Chocolate). But then Adrienne, Eddie, Troy, and Ben showed up and it became even more exciting. Class attendees got to see every part of chocolate making — bean sorting, roasting, winnowing, conching, and finally tempering. They even started off the class with a tasting of several different types of chocolate.
